  • Amaranth


    Amaranth is what some call a Super Food, and you can find the grain (seeds) at your health food store. But the leaves are also very good and can be steamed, put into stir-fry's or used in salads. The leaves are a very good source of vitamins including vitamin A, vitamin B6, vitamin C, riboflavin, and foliate, and dietary minerals including calcium, iron, magnesium, phosphorus, potassium, zinc, copper, and manganese. I will have both a grain type and a leafy greens type variety of Amaranth. I will have them available in 6 pack for the month of June and then will have 4" pot sizes afterwards available for sales.


    Amaranth - Leafy Greens

       $1.00 3" pot  Amaranth - Asia Red is a unique edible amaranth widely grown in Vietnam and Southeastern Asia. A fast growing vegetable that can be harvested in 30 days after sowing. The young leaves and tips are very tender and delicious, excellent for salads and stir-fry.
       $1.00 3" pot  Amaranth - Red Stripe Leaf produces large green leaves with red stripes in the center. The young leaves and stems can be harvested periodically for a long time during the summer growing season. Chinese and Vietnamese use this vegetable for stir-fry and soup.
       $1.00 3" pot  Amaranth - All Red is a unique amaranth variety with red leaves and deep red stems. Upright and tall type plants grow vigorously in hot weather, suitable for growing from late spring through early fall. Young leaves and stems can be harvested for cooking at any growing stage
       $1.00 3" pot  Amaranth - Tender Leaf is a dwarf type variety, 3-8" high, newly developed in Taiwan and has become a very popular vegetable there because of its excellent quality. Tender stems and leaves in light green color are very delicious, suitable for stir-fry, soup and salad. Plants grow very well and fast in warm climates, suitable for spring/summer/early fall crops.
       $1.00 3" pot  Amaranth - Polish is a red flowering annual growing to a height of 4 - 5 feet. Prolific vitamin rich greens are excellent steamed. "Black seeds"




    Amaranth - Grain Variety

       $1.00 3" pot  Amaranth - Bronze having beautiful golden bronze flower heads and growing to a height of 4 - 6 feet. Produces high protein cream colored seeds.
       $1.00 3" pot  Amaranth - Purple having beautiful Burgundy seed heads and growing to a height of 4 - 6 feet. Produces high protein cream colored seeds.
       $1.00 3" pot  Amaranth - mixed having beautiful burgundy, red or bronze seed heads and growing to a height of 4 - 6 feet. Produces high protein cream colored seeds.

    Corn


    I offer heirloom maize/corn seeds ranging from flour, popcorn, roasting, hominy or grits varieties. These will not be anything like the hybrid sweet corns that most people eat or grow.

       $2.00  Painted Mountain is high in anthocyanins, which are beneficial anti-oxidants. It can be ground into flour to make bread, tortillas, or cereal. The ears are 7 inches in length and multi-colored which contains 13% protein. Plants grow about 5 feet in height. (40 seeds)
    85 days
       $2.00  Hickory King is a excellent heirloom favorite used to make hominy and masa flour (dating back to 1875). Large white kernels on 9-10 inch ears with plants growing about 9 - 10 feet in height. (40 seeds)
    90 - 110 days
       $2.00  Strawberry Popcorn is a ornamental popcorn variety that produce 2 inch ears of deep, ruby red colored corn which are shaped like strawberries. Although it is a popcorn variety it is best grown as a ornamental corn due to it's quality of popcorn is small and maintains it's hull. Plant only grow 4 feet in height, making it ideal for a small garden, tubs or containers. (200 seeds)
    105 days
       $2.00  Japanese Hulless White popcorn that will grow to about 5 feet tall and produces 2-3, 6-10” long ears per plant. Small creamy white kernels that pop without a hard center or hulls. (100 seeds)

    Squash


    With Squash they are very sensitive to the cold. Do not plant out side until after the May long weekend. Plants are sold in 4 inch pots.

       $2.00 4" pot  Sugar Pumpkin is round and slightly ribbed, 7" diameter, bright-orange pumpkins. They have the finest sweet flavor and texture for pies and casseroles. Pumpkins average 5 - 7 pounds. I only grow very few extra plants per year so please contact me anytime before May 1st, if you are interest in this plant so I can grow and hold your plant.
       $2.00 4" pot  Kakai Pumpkin is a medium to small 5-8 lb. dark green striped pumpkin. Semi-bush short vine plants that will yield: 2-3 fruits per plant. The Kakai pumpkin is a variety of the Austrian type that yields a valuable green pumpkin seed oil that some European studies show promotes prostate health. Also makes for great easy snacks since it has no shell coating around the seeds. This is a new plant for me this year and hope to have some plants available by the end of May!

    Quinoa


    Quinoa is actually a seed from a plant that is related to Spinach and Chard. You can eat the leaves as well as the seeds. plants will be available in June.

       $1.00 3" pots  Multi-hued Quinoa is used for it's seeds and the leaves can be used as spinach or beet tops are used. Height of plant is 3' - 4'
